How many vegetables should you roast for Thanksgiving, Christmas or a dinner party? Enter your guests and how big a side it is to see the pounds to buy, the olive oil and how many sheet pans you need. Weights are raw, trimmed vegetables.
Times are typical ranges; check with a fork, since size and oven vary.

Plan about 1/4 lb (4 oz) of raw vegetables per person when there are several sides, and 1/3 to 1/2 lb when roasted vegetables are one of only a few sides. Vegetables lose water and shrink as they roast.
At 1/4 lb each, 10 people need about 2 1/2 lb of Brussels sprouts. If they are one of only a few sides, buy 3 1/2 to 4 lb.
A standard half sheet pan roasts about 2 lb of cut vegetables in a single layer. Crowding the pan steams the vegetables instead of browning them, so use more pans for larger batches.
