Hosting a Christmas party, a Christmas market night or Bonfire Night? Enter your guests and glasses per person to see how many bottles of red wine and how much fruit, spice and sugar to buy. Amounts are a common starting ratio: adjust sweetness to taste.

Ratio used (per 750 ml bottle of red wine)

• 1 orange, sliced or studded with the cloves.
• 2 cinnamon sticks, 6 whole cloves, 2 star anise.
• About 1/4 cup sugar or honey (start with less and add to taste).
• Optional: 2 tbsp brandy or orange liqueur per bottle, stirred in at the end.
• A 750 ml bottle is about 25.4 fl oz. Spices barely change the volume.
• Method: warm everything gently for 15 to 30 minutes and keep it below a simmer, or the alcohol cooks off and the spices turn bitter. A slow cooker on low keeps a big batch warm.
