• 2 lb russet potatoes (about 4 medium) and 1 medium yellow onion, grated and squeezed dry.
• 2 large eggs and 1/4 cup flour or matzo meal.
• 1 tsp salt and black pepper to taste.
• About 1/2 cup neutral oil per batch for shallow frying (1/4 inch in the pan), topped up between rounds.
• Fry about 3 to 4 minutes per side until deep golden; drain on a rack. Serve with applesauce and sour cream.
