At 1/3 cup per person, 12 people need about 4 cups (1 quart) of gravy. That takes about 4 cups of broth or drippings, 1/2 cup of fat and 1/2 cup of flour for a medium-thick gravy.
For a medium-thick gravy use about 2 tablespoons of fat and 2 tablespoons of flour per cup of broth or drippings. Use 1 tablespoon each for a thin gravy and 3 tablespoons each for a thick one.
