How many deviled eggs do you need for Thanksgiving, Christmas, Easter, a potluck or a party? Enter your guests to see the halves, eggs and dozens to buy, plus the filling. One spare egg is added per dozen because some whites tear when peeled.
Pipe or spoon the filling back into the whites and keep them chilled. Deviled eggs should not sit out at room temperature for more than 2 hours.

Plan 2 deviled egg halves per person when there are several other appetizers, 3 for a typical party, and 4 if they are a main snack. Each whole egg makes 2 halves.
At 3 halves each, 20 people need 60 halves, which is 30 eggs. Add a few spares for eggs that tear when peeled and buy 3 dozen.
A classic filling for 12 eggs (24 halves) uses about 1/2 cup mayonnaise, 2 tsp mustard and 1 tsp white vinegar or pickle juice, with salt, pepper and paprika to finish.
